Because I have a little one it is easy for me to use being a parent as an excuse to feed my inner little one as well. In this case, I really just wanted a cute, fun, and easy breakfast. That means I needed…

What you need:

*note I used a cupcake maker to make them extra cute u can use a skillet if you like*

  • 1 cup of all purpose flour
  • 1 cup milk
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1 tbsp cinnamon
  • pinch of salt
  • pinch of Nutmeg (I use freshly grated use twice as much if you use powder)
  • Chocolate Hazelnut Spread (Nutella)
  • Peanut Butter

How it’s done:

~Preheat cupcake maker or skillet (I used a cupcake maker to make all the pancakes uniform and cute)
~ Combine your flour, baking powder, sugar, cinnamon, salt, and nutmeg in a small bowl and combine with a fork or wisk.
~ SLOWLY add your milk to the mixture while mixing. mix until completely combined ( thin enough to pour but thick enough to cover the back of a spoon)
~Fill your each cupcake spot no more than half full (in skillet you can pour whatever size you want).
~Once the Batter starts to bubble on top and the edges are no longer shiney turn or flip your pancake.
~Remove and repeat until you have used all the batter or you decide you have enough pancakes (the batter can be saved for later and for other recipes)
~Lastly layer pancake, peanut butter, pancake, Nutella, and pancake to make a tower. You don’t need any syrup but if you want to go into sugar shock then feel free.
Makes about 6 towers of 3 mini pancakes each.
 

Substitutions and Leftover Batter

~You can switch the nutella and/or Peanut Butter for Jelly, fruit, marshmallow fluff or anything else “spreadable.”

~The cinnamon and nutmeg can be switched out for any spices or herbs to turn them savory, spicy or just to compliment whatever you are using as filling (lemon zest to compliment orange marmalade is delicious)

~Left over batter is wonderful just quickly fried up in your favorite frying oil. It makes for a crispy outside and fluffy inside. It is perfect for dipping and decorating like doughnuts!

~You can always cheat and use pancake mix just use milk instead of water and add in your cinnamon/nutmeg.
