Twisted Shrimp Parmesan and Penne

Now before you hit the back button…THE SAUCE IS SUPPOSE TO BE GREEN I SWEAR! Also this is healthier than most other “parmesan dishes.” As a matter of fact, I’m pretty sure it doesn’t qualify as a parmesan dish. Let’s get cooking!

Twisted Shrimp Parmesan and Penne

What you need:

  • 2 cloves of Garlic (minced)
  • olive oil
  • 2 finely diced shallots
  • 1 cup of milk
  • 1 cup toasted pine nuts
  • 1 cup basil
  • 3 cups spinach
  • 1 tbsp rosemary
  • 1 tbsp parsley
  • 1/4 cup parmesan cheese
  • 1 cup finely chopped cooked bacon
  • 8 ounces (1/2 lb) peeled shrimp
  • 2 tsp garlic powder
  • 2 tbsp lemon juice
  • 2 tsp chili powder
  • sea salt (or w.e. salt you prefer)
  • pepper (to taste)
  • 4 cups whole grain penne pasta (or w.e. pasta you like)
     

How it’s done:

~Put your shrimp, lemon juice, garlic powder, handful of salt, a pinch of pepper, and at least 3 tbsp of olive oil (you may need more to coat the shrimp) into a bowl
~mix everything together really well then cover and put it in the fridge.
~put the minced garlic, shallot, 4 tbsp olive oil, pinch of salt, pepper, basil, rosemary, parsley, and toasted pin nuts in food processor (or blender) and blend until everything is mixed together (it will not look very pretty)
~preheat a sauce pan on medium low. Add the milk to the pan and heat it up (DO NOT BOIL YOUR MILK)

before it is cooked

~Add the spinach and parmesan cheese to your mixture in the processor and mix until the spinach is well incorporated
~Pour your mixture into the milk and whisk thoroughly. Turn your heat to low; stirring occasionally
~Cook your penne according to the instructions on the box (unless you are using fresh of course) make sure it is al dente so it doesn’t get mushy.
~drain your pasta (don’t rinse it or you will rinse off any seasoning). Set aside.
~Heat a skillet on medium heat. Add enough olive oil to thinly coat the bottom of a skillet.
~Put your shrimp in the skillet (do batches to not crowd the pan). cook each side about 2 minutes or so (make sure the first side is turning pink before you flip it)
~turn your skillet on low
~set your shrimp aside for second while you heat the bacon (if it isn’t hot already)
~Put your pasta, and shrimp back in the skillet with the bacon, and toss it all together

it’s more green in person

~ Add your yummy sauce (as little as you want or all of it) and toss everything together to make sure every bit is coated.Makes about 4 servings

Normally we would make some sort of veggie but you have your veggies in your sauce! if you really just don’t want spinach you can switch it out for broccoli (won’t taste the same) And if you are having trouble with your sauce being too thin add a little cornstarch slurry (hot water and corn starch mixed well) to your sauce and boil it for a second). Enjoy and remember…it is totally easy being green :p
