Savory Pomegranate Bread

I really wanted to make some bread with pomegranate and every recipe I knew/found was for sweet dessert breads. I wanted something savory so the pomegranate would really stand out and be like a sweet burst of yuminess. So I took two of my favorite bread recipes and made my own bread.

Savory Pomegranate Bread

What you need:
1 cup of pomegranate arils (if you don’t know how to prep a pomegranate then look here for easy quick steps)
4-5 cups of sifted flour (you’ll see why later)
1/4 cup warm water
1 cup scalding milk (don’t let it burn!)
1/2 cup butter
1/4 cup sugar
1 teaspoon salt
1 egg slightly beaten
2 packs dry active yeast
2 tablespoons melted butter

How it’s done:

~dissolve yest in warm water.
~combine Milk, 1/2 cup butter, sugar, and salt. Allow to cool to luke warm.
~ Add 2 cups of Flour and mix well. Add yeast and egg until blended.
~Fold in pomegranate arils (the mixture will keep them from popping)
~ Stir in enough of the remaining flour to make a soft dough. Make sure you add it slowly and mix well so you do not over flour.
~turn out on a lightly floured surface.
~Knead for several minutes until smooth and elastic; add more flour as needed.
~Place in greased bowl (you can use almost any oil or fat you like). Turn the dough to coat outside of ball with the grease.
even after doubling in size it is pretty small going in
~Cover and let rise in a warm place for 1 hour 45 min. Punch the dough down and let it rest on a floured surface covered for 10 minutes.
~shape the dough into an oval and place on a greased baking sheet (a loaf pan will be too small trust me)
~bake in a preheated oven at 375° F for 20 minutes. Then reduce the heat to 350° F and bake for 40 minutes. In the last 10 minutes, brush the melted butter on the outside of the loaf and finish baking.
~let it cool if you have the patience. (I don’t)

Makes about 15-20 servings

Switch it up:

You can switch up the fruit any way you like and even add things like almonds and chocolate chips if you want it sweeter.

Switch the yeast for double-acting baking powder (double-acting reacts when in contact with liquid then reacts again when heated) by not putting the baking powder in warm water before adding it.

Top with powdered sugar or dried fruits to make into a dessert.

This bread is great for any time of the day and it makes a wonderful french toast!

 It even makes a great turkey sandwich that kind of reminds me of thanksgiving. enjoy it any way you like.
